3 tbsp Jaggery (grated)

About Ragi
Eleusine coracana, or finger millet, also known as ragi in India, kodo in Nepal, is an annual herbaceous plant widely grown as a cereal crop in the arid and semiarid areas in Africa and Asia. The finger millet or ragi is malted and its grain is ground into flour. The flour is consumed with milk, boiled water, or yogurt. The flour is made into flatbreads, including thin, leavened dosa and thicker, unleavened roti. There are various food recipes of finger millet, including dosa, idli,drinks and laddu. In Karnataka, finger millet is generally consumed in the form of a porridge called ragi mudde in Kannada. It is the staple diet of many residents of South Karnataka. Mudde is prepared by cooking the ragi flour with water to achieve a dough-like consistency. In Tamil Nadu, ragi is called kezhvaragu and also has other names like keppai, ragi, and ariyam.[24] Ragi is dried, powdered, and boiled to form a thick mass that is allowed to cool. This is the famed kali or keppai kali. This is made into large balls to quantify the intake. It is taken with sambar or kuzhambu. For children, ragi is also fed with milk and sugar (malt). It is also made in the form of pancakes with chopped onions and tomatoes. Kezhvaragu is used to make puttu with jaggery or sugar. Ragi is called koozh – a staple diet in farming communities, eaten along with raw onions and green chillies. |

  1. Ragi kanji is staple Karnataka food. You either have it herbed &/or spiced in buttermilk or sweet with milk or buttermilk. There's no mixing of lemon juice here. Also you get a sprouted ragi flour which is all the more nutritious & doesn't need cooking. You can directly mix it with whatever liquid base you prefer.
    PS: lemon juice & milk is a no-no. Wrong & non-compatible combination that only creates "Ama" in the body. If you want to use lemon juice prepare kanji with water only. Do not add milk.

  4. Its not Ragi Kanji, its "Ragi Ganji"..
    Its common drink in Karnataka, if Children dnt eat breakfast this ganji L b given as its supplement and diabetes ppl take it as their morning drink.

  5. Ayurveda clearly states milk when taken with salt turns poisonous, it’s very harmful for the body in the long run. I kindly request you plz don’t turn this highly nutritious traditional recipe into crap just for the sake of your “chef’s experiment”. Every chef has got a thing as ki “is recipe me mujhe apna kuch touch dena hai”. But plz at least spare these healthy traditional recipies. Kripa kar ke inhe healthy hi rehne den, toxic na banaaye. P.S. I had tried your pav bhaaji recipe, it was delicious.

  6. The chef has mixed both sweet kanji and savoury kanji . Combining cardamom and hing is unusual and adding lime to kanji boiled in dairy milk is wrong according to ayurveda.

  7. We soak the ragi whole then grind it in stone grinder adding sesame, almond,coconut,poppy seeds,Grint it and strain and add sugar then drink it's amazing😋I suggest every one to jst try it once.

  8. May we add buttermilk or curd instead of milk to the ragi Kanji when we wish to consume.let us know & when should we add buttermilk or curd
