Seriously Delicious Quinoa salad

Serves 6

1 cup of quinoa (blended of red and white)
2 tbsp. of shallots- minced
1 tbsp. of oil (vegetable, olive, or avocado)
1.5 to 2 cups of broth (vegetable or chicken broth)

Instructions 1:
Step 1. Wash & drain the quinoa for 30 mins before cooking.

Step 2: Heat up a non-stick skillet over medium heat. I use a 12-inch non-stick skillet, but you can also use an 8-QT stock pot.

Step 3: Add vegetable oil and stir to coat the skillet evenly.

Step 4: Sauté 1/4 cup of shallots and then add your 1 cup of quinoa.

Step 5: Add 1.5 to 2 cups chicken broth to your quinoa (depending on how crunchy you like your quinoa) and bring to boil. Cover with lid and reduce the heat let it cook 15-20 mins.

Step 6: Remove the cooked quinoa from the heat and fluff, let it cool for 30 mins.

Instructions 2:
In a separate bowl, combine your salad dressing:

Salad dressing ingredients:
4 garlic cloves – minced
1/4 cup- olive oil
1/2 – lemon juice
1/4 – salt
1/2- black pepper

Instructions 3:
In a large mixing bowl, toss all the herbs and vegetables ingredients together. Chill for 30 mins to 1 hour for flavors to absorb.

Parsley – chopped
1/2 cup of Basil – chopped
1/2 cup of Green onions – chopped
1/4 cup Cilantro – chopped
1/2 cup of Mints – chopped
1 -2 cups of Cherry tomatoes – cut in halves
1 -2 cups of Baby cucumbers – thinly sliced
